Your dog jumps up because it works.
Every time they launch at you and you push them off, talk to them, or knee them away, you hand over the thing they were after: your attention. Being touched and spoken to is a win to a dog, even when you’re saying “no”.
Swap the timing. The moment four paws are on the floor, that’s when the hello, the treat and the eye contact arrive. Feet up, you go quiet and turn your shoulder. Feet down, the party starts. You reward the behaviour you want and the jumping fades.
Give every visitor the same rule and your dog picks it up fast.
